I know, I know, I'm a little behind this week.
I was going to make corned beef and cabbage for dinner but then realized that K.C. would probably be the only one eating it. So, I opted to make some crispy Dijon chicken, hash brown casserole, salad, and corn. To get in the spirit I dyed the sour cream/soup mix green before mixing it with the hash browns.
Quinn kept saying that she wanted "some of that green ice cream." We kept telling her it was potatoes, not ice cream. She would take a bite and make a face and you just knew that she was expecting it to taste like ice cream:-) Once she finally accepted that it wasn't ice cream, she liked it. But it took awhile! Silly kid!
